These wonderful easy to make fudgy lemon oat cookies are actually a recipe of my boyfriend. When we were feeling like making cookies, these were the ones to go with. I would have never expected this from myself, because a few years ago I just couldn’t understand how someone could actually enjoy oats at all. And now I have them for breakfast every morning… Yes I am that oat person.
I love to bake with oats and these cookies are one of my favorites with them. They are so simple, but so nice, crunchy on the edges and fudgy in the middle. Whenever you are making these, you want to make sure you make a whole box of them. And ask someone else to hide them from you, so you don’t eat them all.
Ingredients
For 12 large lemon oat cookies or 24 medium sized one you will need:
- 180 g | 2 cups rolled oats
- 138 g | 1 cup flour
- 225 g | 1 cup butter
- 200 g | 1 cup raw or white sugar
- 1 egg
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon or mixed spice
- 1 tsp lemon juice
- zest of 1 lemon
Directions
- Flour mixture: In a small bowl, mix the flour with the cinnamon, salt and baking soda.
- Fluff your Butter: In another larger bowl, beat the butter and sugar fluffy. Then mix in the egg.
- Mix: Fold in the flour mixture and the oats with a spatula or wooden spoon. Also add in the lemon zest and juice. You should be able to roll the dough into balls, without it sticking too much. If your dough is to wet or dry, add some flour or lemon juice.
- Make balls: You now have 2 options: 12 large cookies or 24 medium sized cookies. I like them either way, but I would go for the medium sized ones if you like them a little bit more crispy (all the pictures are from a batch medium sized cookies). Now form into small balls (60 g p cookie for the large ones and 30 g per cookie for the medium sized ones), press them down with your thumb on the baking paper.
- Bake: Bake your large cookies in a 180 degree oven for 14 minutes and your medium sized cookies for 8 to 9 minutes.
