French Toast with Caramelized Banana

This is an example of a super simple recipe that makes advantage of ingredients that you otherwise maybe would throw away: French Toast, but fancied up a little bit with caramelized Banana. I love these kind of recipes to save food going to waste. In New Zealand alone 580 NZD worth of food ends up in the bin per household per year! Personally I think that is insane. So hey, let’s save some of your old stale bread and turn it into something delicious again!

French Toast with caramelized banana is just so simple, and it doesn’t take too much time, so it’s perfect for a nice surprise breakfast in bed kind a thing. Or just if you feel like something nice to warm your belly and heart on a sunday morning. It doesn’t really matter, this just makes you happy. And for the ones that aren’t satisfied with this, to pimp it up even more, I added some of my favorite Whittaker’s Chocolate on top.

So you can actually make this with any kind of bread, but the best bread to go for is some good old stale bread. Why? because this soaks up more liquid than fresh bread and that is exactly what you want for your french toast to soak up your egg mixture real good. If you insist on using fresh bread, I would definetely go for a brioche kind of loaf, this will elevate the recipe even more and is actually one of my favorites to use. But hey any kind of supermarket toast bread is also good for this.

Ingredients

For 6-8 slices of bread you will need:

  • 3 eggs
  • 240ml | 1 cup of milk
  • 2 tsp cinnamon
  • 1 tsp vanilla essence
  • pinch of salt
  • 3 bananas
  • 6 tbsp brown sugar

To serve (optional):

  • maple syrup
  • roughly chopped chocolate

Directions

  • Egg mixture: start with mixing 3 eggs in a bowl or a deep dish, something you can easily place your bread in. Now mix in some cinnamon, you do this before you add the milk so it has a better distribution through your mix and doesn’t swim on top of it.
  • Mix in the vanilla, salt and half of the brown sugar. Give everything a good whisk.
  • Bread Soak: Heat a skillet on medium heat, one that fits at least 2 slices of bread. Now soak your bread in the egg mixture, 30 seconds to 1 minute per side. Don’t overdo this, as there is no mixture left for the other slices of bread.
  • Toast: add some butter or coconut oil to your skillet and toast your toast 3 minutes per side or until nicely golden brown. Repeat this for all your slices of bread.
  • Go Bananas: Keep your skillet warm and slice the bananas in half, sprinkle some of the remaining sugar on top and caramelize them quickly in your skillet, maybe 1 minute per side.
  • Assemble Toast: put your caramelized bananas on top of your french toast and you are done. If you want to go a little bit extra, add some roughly chopped chocolate and maple syrup on top of it.
