Vegan Frozen Yoghurt & Blackberry Bars for an amazing and quick breakfast

It has been warm for the past few months in Auckland, it sometimes feels like summer is never going to end. So I was definitely craving something fresh what can cool me down during these times, so what is better than some delicious vegan frozen yoghurt & blackberry bars. I am also trying to do some more meal prepping as I am very busy with my workouts at the moment and trying to prepare for long distance trail running. So it would be the most amazing thing for me to just grab my breakfast and go!

These bars are also a nice alteration to the usual oats I eat every morning. Or yeah, this recipe actually also use oats, but okay, it is still different and so yummy! The most beautiful thing of these bars is that you don’t even have to bake anything, it is all vegan and full of nutritients to start your day off.

Maybe the most favorite part of this recipe is the no bake oat base where I used some toasted sunflower seeds and this mixture of honey and peanut butter… It is just amazing on itself honestly, I could snack on that all day. But the layer of frozen yoghurt and the stewed blackberries on top just make this complete for me. So what are we still talking about, let’s bake this shall we.

Ingredients

for the no bake oat base you will need:

  • 90 g | 1 cup oats
  • 66 g | 1/2 cup sunflower seeds
  • 4 tbsp honey
  • 4 tbsp peanut butter
  • 175 g | 1 cup dates (about 12 medium sized dates)
  • 1 tsp cinnamon

For the yoghurt layer you will need:

  • 500 g | 2 cups vegan yoghurt of your choice, I chose Little Islands Cashew and coconut based vanilla bean yoghurt
  • 150 g | 1 cup frozen blackberries
  • 4 tbsp lime or lemon juice
  • 4 tbsp water

Method

  • Blackberry sauce: start with your blackberries and put them in a small saucepan on low to medium heat. add the water and your lime/lemon juice as well. Cook for about 15 minutes with an occasional stir. It should turn into a nice sauce, if there is no liquid left, just add a few more tablespoons of water. Set aside and let it cool down.
  • Mix your oats, toasted sunflower seeds and cinnamon in a bowl. Put the honey and peanut butter in a small saucepan over low heat for a few minutes until it becomes stirrable and you can mix the two. While the mix is still warm add it to your oat mixture and mix everything with a silicone spatula or a spoon.
  • Press your oat mixture down in a 9 x 9 inch lined square pan. When it has completely cooled down, pour your choice of yoghurt on top and dot it with the blackberry sauce. You can use a knife to swirl it and make a nice pattern.
  • Put it into the freezer for at least 1-2 hours before you cut them in squares. Let the bars thaw 2-3 minutes before eating and enjoy!
